Sbrinz AOC is an extra hard cheese from Central Switzerland. It is prepared by hand in the traditional way in copper kettles. Because it is very dry and has a high salt content, it has a long shelf life. Sbrinz has a characteristic, tangy/intense cheese taste. Due to its long aging period of at least 16 months, its consistency is waxy/crumbly and is somewhat crystalline.
Sbrinz is often enjoyed in the form of chunks or sliced rolls.
